Raised on his family smallholding in Herefordshire, Tom drew his inspiration from the nature that surrounded him. He developed a passion for hunting and foraging in the Black Mountains as well as a hands-on respect for farming. The resulting appreciation of quality products and sustainable sourcing remain to be the cornerstones of Tom’s work.

Tom’s approach to food is honest, uncomplicated and produce driven, using the best seasonal ingredients that are cooked with simple technique.

Having spent the last decade working in some of London’s top restaurants, such as The Dorchester and Dinner, Tom is now on a mission to bring simple, high quality cooking into peoples homes.

Tom has had the pleasure of working with some of the leading chefs and food people in the London area. Most recently Tom has served up summer flavours at a two day pop up with Phil Howard, a one night takeover for Wildfarmed and has hosted ‘Dinner with Thomas Straker’ at Layla.

Right Then started as a pop up concept hosted by Tom at Carousel London. As lockdown eased, the pop up evolved from a takeaway only event to a seated dining experience that ran for 12 sold out weeks. Tom and the team served up 12 unique menus that brought ‘Food you want to eat’ to the people.
