A limited drop of only 70 - 10 inch'' chef's knife, the product was designed by Tom in collaboration with a well-known Irish knife maker.
The knife was made in Sheffield by a craftsman with over forty years of steel production experience.
The knife has a deep heal and allows for a supreme heal-to-tip rocking motion.
The handle is made from green micarta, which is compressed linen with resin. This handly only improves over time.

X50CrMoV15 is a German High/mid-range martensitic stainless steel mainly used in high-quality kitchen knives, it’s high in Chromium, which makes it great for corrosion resistance.

FORMING A PATINA

As your knife blade is exposed to the elements, it will form a patina. This can be identified as greyish spots appearing on the knife. This is a natural process to protect the blade from rusting. Each patina is a unique story of everything you have chopped, sliced and diced. If you are not a fan, it can easily be removed with high grit sandpaper.

KNIFE CARE

Keep it clean - Keep it dry
No dishwasher - No soaking
No bones - No acid

STORAGE

Keep your knife away from other inferior utensils.

SHARPENING

15/20 angle - Full length of the blade.
Hone your blade on a steel - for the best results sharpen your blade on a whetstone.
Professional sharpening once a year keeps the knife's edge.
