Green beans with almond dressing

Almond dressing 


100g Blanched Almonds 

Boiling water to cover 

1 clove Raw garlic 

Red wine vinegar 

100ml Olive oil 

Salt 

Sugar 


400g Green Beans 

2 Red Chillis

1 Handful Mint

1 Handful Parsley 


Method

Cover almonds with boiling water and leave for 1 hr.


Place soaked almonds in a blender with 150ml water 

Grate in garlic, add red wine vinegar, olive oil, salt and sugar, blend until smooth.

Keep in the fridge. 


Burn the outside of the chillis over an open flame or on a grill, until the skin is black all over, place in a bowl and cover with a cloth, allow to steam for a couple of minutes. Peel the skin and remove the seeds, and then dice the flesh.


Pick and chop the herbs


Blanch beans for 4 minutes in well salted water


Mix the beans, herbs, chilli and dressing, taste and adjust the seasoning. 


Serve room temperature as a side.
