Mac & Cheese

Serves
4

400g Pasta shape of your choice
50g Butter 
50g Flour 
600ml Milk
50g Mozzarella
50g Gruyere 
50g Cheddar 
25g Pecorino Romano 
25g Parmesan 
¼ Nutmeg grated 
Salt & Pepper to taste 
Sourdough breadcrumbs, tossed with olive oil


To make the béchamel, melt the butter in a sauce pan and add the flour, cook the flour for a couple of minutes over a medium heat.

Slowly add the milk whisking constantly, making sure there are no lumps in the sauce. 

Cook the sauce until it boils and turn on to low and cook at a low simmer for a few minutes stirring constantly. 

Remove from the heat, add the grated cheese, keeping a handful back for the topping, add the nutmeg and check the seasoning.

Pre-cook the pasta in boiling salted water for 3-4 minutes and drain. 

Mix the blanched pasta and the sauce, mix well.

Place in a baking dish or pan of your choice, top with breadcrumbs and the remaining cheese. 

Bake at 250 degrees for 10-15 minutes until it is a deep golden brown on top.
