Salsa Verde

Salsa Verde

2 handfuls Parsley
1 handful Mint
1 clove Garlic (grated)
1 tsp Dijon mustard
1 tsp Capers
1 Lemon (juice and zest)
100ml Olive oil
Maldon salt (to taste)

Pick the herbs, grate the garlic

Add everything to a food processor and pulse until a nice coarse consistency. (or you can chop everything with a knife)

You don’t want it too smooth
